Step 2: Make the Marinade
All the marinade ingredients, including yogurt, lemon juice, ginger-garlic paste, tandoori masala, paprika, cumin, coriander, garam masala, turmeric, red chili powder, salt, and oil, should be put in a big bowl . If you want the chicken to have a traditional red appearance, add a few drops of red food coloring. Make a smooth paste by thoroughly mixing everything.

Step 3: Marinate the Chicken
Add the chicken pieces into the bowl with the marinade and coat them thoroughly. Ensure that the marinade enters the chicken’s cuts. For best taste, marinate overnight if it’s possible, otherwise cover the bowl and chill for at least two hours.

Step 4: Preheat the Oven
Set the oven temperature to 400°F, or 200°C . If you’d like, you may also use a grill.

Step 5: Cook the Chicken
To make cleanup easier, line a baking pan with parchment paper or aluminum foil. If you have a wire rack, place it on the tray so the chicken cooks evenly on all sides. Otherwise, you may put the chicken straight onto the tray.

Place the pieces of marinated chicken on the rack or tray. The chicken should be cooked through, with an internal temperature of 165°F (74°C), after 30 to 40 minutes of baking . You may roast the chicken for the final five minutes if you want it to be a bit crispy or browned .

Step 6: Optional – Add Smoky Flavor
Burn a little piece of charcoal until it’s red hot to provide a smokey taste. To give the chicken a smokey scent, put it in a small dish, pour some oil over it, and cover it with foil right away for five to ten minutes.

Step 7: Serve
After cooking, take the chicken out of the oven and give it some time to rest . Garnish with fresh cilantro leaves and serve with lemon wedges on the side . For a filling dinner, serve it with basmati rice, naan bread, or a simple cucumber salad. You can also serve it with a cooling yogurt-based dip like raita .
