ABOUT SCHEZWAN FRIED RICE

 Schezwan fried rice recipe is a Indo-Chinese recipe. It is a very popular Chinese dish. This Schezwan fried rice  originated from the Sichuan province of China. Basically it’s a very spicy food. So if you don’t eat spicy food very much you  can avoid it. Today I will make this recipe with vegetables. So this is a vegetarian recipe which is made with few ingredients you have at home. You can easily make it at home with schezwan sauce.

Now let me tell you what are the ingredients I used for this recipe the ingredients that I will use for the recipe that I am going to make today that we all have at home that we use every day.

INGREDIENTS

  1. 2 cups of Rice (Basmati rice).
  2. 1/4 cup chopped spring onion
  3. 3/4 cup chopped French beans
  4. 3/4 cup chopped capsicum. If you want you can also use red and yellow bell pepper.
  5. 1 medium sized chopped carrot.
  6. 1 tablespoon green peas.
  7. 4 tablespoon oil.
  8. 1/2 tablespoon ginger.
  9. 1 tablespoon chopped garlic. 
  10. 1 medium sized onion finely chopped.
  11. 2 tablespoon celery finely chopped.
  12. Salt to taste.
  13. Few dried red chilli.
  14. 1/2 teaspoon turmeric (optional).
  15. Red chilli powder.
  16. 1 tablespoon tomato ketchup.(for make Schezwan sauce).
  17. 1 tablespoon soya sauce.
  1. 1 teaspoon black pepper
  2. 1/2 teaspoon garam masala
  3. schezwan fried rice masala 

PREPARATION: 

Let’s start to make this recipe                   

First you need to wash the rice and soak the rice for 30 minutes. Then wash all the vegetables like carrot, beans, capsicum and onion. Then cut all the vegetables one by one. Now heat 6 cups of water to cook the rice. When the water gets hot. add rice to cook. Rice should be cooked on high to medium flame. Then drain the rice immediately to a colander to avoid drying, cover and keep the rice aside.

 

 

 

 

PREPARATION FOR SCHEZWAN SAUCE:

To make the sauce you need to soak 7-8 dried chillies in hot water for 5 minutes. Then blend it with the help of blender. Now take a pan and heat 1 teaspoon oil in it and add 1/2 tablespoon ginger, 1 tablespoon garlic and fry until it turns aromatic. Next add medium sized chopped onion and fry onion until it turns golden. Then add 1 teaspoon of soya sauce, 1/2 teaspoon vinegar, 1 tablespoon tomato ketchup, 1/2 tablespoon sugar. Add red chilli paste, 1 tablespoon red chilli powder, crushed black paper and salt as per taste. Now add 3-4 tablespoon water and saute till the sauce thickens.

 

HOW TO MAKE SCHEZWAN FRIED RICE

Now I’ll tell you how to make the  Schezwan rice:  First you need to take a pan and heat 2 tablespoon oil. When the oil turns hot then add chopped onion and garlic and fry until it turns aromatic. Then add all the chopped vegetables like carrot, spring onion, beans and capsicum. If you want you can also use red and yellow bell pepper. Cook all the vegetables until it crunchy but not soft. Then add green spring onion and the Schezwan sauce. Add salt as per taste. Now it’s time to add the rice and gently mix to coat the rice with the sauce. Stir it further for 2 minutes. Then add black pepper powder and garam masala or schezwan fried rice masala. You can also use more sauce if needed. Now your delicious tasty Schezwan fried rice is ready to serve. You can serve this fried rice with chilli chicken or chilli paneer and enjoy.
