Ingredients

For the Fried Rice:

2 cups brown rice
1 cup shelled edamame (fresh or frozen)
1 cup mixed vegetables (carrots, peas, bell peppers)
2 green onions, finely chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons soy sauce (or tamarind for gluten-free)
1 tablespoon sesame oil (plus more for drizzling)
2 tablespoons vegetable oil
2 large eggs (optional)
Salt and pepper to taste
Sesame seeds for garnish (optional)

Instructions

Prepare the Ingredients:

If using frozen edamame, cook according to package instructions and drain.
If using day-old rice, break up any clumps with a fork. Fresh rice can be used but may result in a softer texture.

Cook the Eggs (Optional):

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat.
Crack the eggs into the skillet, season with a pinch of salt, and scramble until fully cooked. Remove from the skillet and set aside.

Sauté Aromatics:

In the same skillet, add the tablespoon of oil.
Add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add Vegetables and Edamame:

Stir in the mixed vegetables and cooked edamame. Sauté for 3-4 mins.
Combine Rice and Seasoning:

Add the cooked rice and breaking up any clumps. Stir well to combine.
Pour in the soy sauce and sesame oil.

Incorporate Eggs:

If using, add the scrambled eggs back into the skillet. Stir until everything is well.
Finish and Serve:

Add onions, salt and pepper to taste. If desired, drizzle a little extra sesame oil over the top.
Garnish with sesame seeds if using.

Day-Old Rice: Using day-old rice is key for the best texture. Freshly cooked rice tends to be too moist.
