Chocolates come from the seed of the Theobroma cacao tree, which was first found in Mexico, South America, and Central America, where it had been cultivated at least three millennia ago. 70% of the cacao seed has been found in Africa, and the seed cacao was first used around 1100 BC. The seeds are very bitter, and they have to be fermented to enhance their flavour.
To make a bar of chocolate, the cacao seeds are first covered with banana leaves for fermentation. After the fermentation, it becomes cacao beans, and the cacao beans are roasted slowly at a low temperature. Then it is time to separate the shells from the nibs so that the nibs can be ground slowly to make a thin powder called cacao liquor. Cacao liquor is the most essential component of chocolate. The cacao liquor is then liquified and moulded with other ingredients. This is the process of making chocolate liquor, and the liquor is processed into two components: cocoa butter and cocoa solids.
